Viking Range and Rangetop Repair

How it shows up

  • A burner clicks but never lights, or lights and then drops out
  • The oven runs hot or cold against a thermometer left on the middle rack
  • The griddle or grill section heats unevenly across its width
  • The oven door sits proud at one corner and the seal no longer touches
  • The convection fan runs but the cavity still browns on one side
  • Every burner sparks at once whenever one knob is turned
  • The gas smell is faint but constant near the back of the unit

A professional range is heavy, hot and simple in principle. Gas or current arrives, a control decides how much, and a burner or element does the work. Almost every failure sits in one of those three places. Our job is to find out which one before anything is ordered.

The surface

Sealed burners fail in a short list of ways. The spark electrode gets fouled with boil-over and stops jumping a clean arc. The burner cap sits crooked after a cleaning and the flame goes yellow and lazy on one side. The igniter module loses one channel and starts firing every electrode at once, which is loud and alarming and almost never dangerous. Or the burner port ring is packed with carbon and the flame will not carry around the crown.

None of that needs a new range. It needs the cap and head lifted off, the ports cleared, the electrode gap checked and the module tested channel by channel. If the module is dead we replace it. If it is not, we do not.

Griddle and grill sections are their own animal. They carry a lot of mass and they heat from a single burner under a thick plate, so an uneven cook surface is usually a warped plate or a burner running low on pressure, not a control fault. We check the plate flat before we touch anything electrical.

The oven

Ovens drift. A professional oven that reads 25 degrees off after eight years is behaving normally for its age, and the fix is calibration, not a board. We put a thermocouple on the middle rack, run the cavity up to a setpoint, and watch the cycle. What the display says is not evidence. What the probe says is.

Beyond drift, the real oven failures are the bake or broil element opening up, the temperature sensor going out of resistance range, a convection motor with a dry bearing that turns but does not move air, and hinges that have taken the weight of a loaded door for a decade and let it hang crooked. A door that sits proud at one corner is a hinge job. The gasket is usually innocent; it simply cannot touch what is no longer square.

The old-kitchen problem

Riverside, Avondale, Old Ortega and San Marco have kitchens laid out between the 1900s and the 1930s. The cabinet opening is frequently narrower than a modern professional range, and the circuit feeding the counter was never sized for one. We have pulled ranges out of San Marco kitchens where the entire cooking wall ran on a single shared 15-amp branch.

Before a range goes back into an opening like that, the opening and the circuit have to be right. If the answer is a carpenter and an electrician rather than a part, we will tell you that on the first visit and charge you the diagnostic only. Nobody gains from us forcing a heavy appliance into a hole that does not fit it.

Gas work and what we will not do

We test, adjust and replace burner components, valves, igniters, thermostats, sensors and control boards. We do not run new gas line and we do not size a new circuit. Those are licensed trades in their own right, and we will hand you a clear description of what needs doing so the right contractor can quote it without a second diagnostic.
